Wet ingredients:

  • 1 teaspoon vanilla extract (real)
  • 1 large egg (beaten)
  • 3/4 cup honey
  • 1/3 cup extra virgin olive oil
  • 3 overripe brown bananas (mashed and peeled with potato masher)

How to Make

  • Preheat oven to 350 degrees F.
  • Lightly spray a loaf pan with cooking spray.
  • In a medium bowl, whisk the wet ingredients until well combined.
  • In a separate large bowl, sift the dry ingredients together.
  • Add the wet ingredients to the dry ingredients and stir with a wooden spoon, until just combined. Do not over-mix.
  • Fold in walnuts and chocolate chips, if using.
  • Pour mixture into loaf pan and bake for 50-60 minutes, until a toothpick or the tip of a knife come out clean.
  • Let to cool in loaf pan on the rack before slicing.
