I love these pancakes because there is no need for baking powder or baking soda. This fluffy pancake recipe is more healthy and gluten free which you will love to eat. I used these pancakes for my breakfast with butter and honey, and these are great for morning breakfast recipe. Instructions
  1. In a big bowl, mix the flour, milk powder, salt, and sugar.
  2. Add the egg mixture gradually into the flour mixture, whisking* to just a smooth batter.
  3. Mix in the melted butter.
  4. Lightly grease a shallow frying pan and heat until hot.
  5. Add enough pancake batter to cover the bottom of the pan thinly.
  6. Cook for a few seconds until light brown. Turn over and cook the other side.
  7. When cooked, place on a plate and fold.
  8. Keep warm in a 100 degree C oven if not serving immediately.
  9. Serve pancakes hot with jam or honey. For the sweet tooth, can sprinkle castor sugar with freshly squeezed lemon juice.
  10. Since there is no baking powder added, we depend on the beating process to incorporate air and add fluffiness to the pancakes.
