This is an easy form of a south of the border classic which is Chilaquiles. This recipe uses chicken with leftover tortilla chips, corn, cheese, Pace® Picante, and olives. The preparation time for the Monterey chicken tortilla casserole is 15 mins and 40 mins of bake time, which takes 55 mins in total at all.

Ingredients for Monterey Chicken Tortilla Casserole

  • Tortilla chips
  • Chopped red or green pepper
  • 2 ounces shredded cheddar cheese which is almost ½ cup
  • ½ cup sliced pitted ripe olive
  • ¾ cup Pace ® Picante sauce
  • 1 cup cream style corn (about 15 ounces)
  • 2 cups cubed cooked chicken
  • 1 cup coarsely crumbled tortilla chips

How to cook it

First, layer the crumbled chips, corn, Picante, and chicken in a 1-quart casserole. Now top it with cheese and olive.

Now the second step is set your oven to 350°F and bake it for 40 mins. When you see that the mixture is hot now and bubbling, then it’s ready to serve. Top with red or green pepper and serve with chips. You can serve this dish for 4 people easily.
